From their creamery in Cambria on the Central Coast, Jack and Michele Rudolph offer both cow and goat milk cheeses such as fromage blanc, Cabrillo, Lumberjack, and other terrific varieties. Paso Vino is a very popular variety, a Spanish-style hard cheese with hints of wine. The ranch had been a dairy and creamery over 100 years ago, founded in 1870 as a cattle ranch and part of the Harmony Valley Creamery Association. It changed hands through the years but has returned to its dairy farm roots.
