A beautiful assortment of locally-made artisan specialty cheeses can be found in many of our farmers’ markets. The most common varieties of cheese found at the market are made with goat, sheep, or cow’s milk. Another benefit to buying local cheese at the farmers' market is that cheeses sold here are usually prepared in small handmade batches.
Cheeses from the markets are more unique and flavorful than their mass-produced counterparts. The complexity of flavor is accomplished by aging and ripening the cheese in a variety of environments such as caves or cellars. One can find hard and soft cheeses, curds, flavored, or creamy cheeses.

Hard cheese should be wrapped tightly. Soft cheeses should be wrapped in a paper towel in order to breathe and then placed in a plastic container. Fresh cheeses should be eaten quickly because they spoil after a few days.
