Beets are round and bulbous in shape, and come in a variety of colors from deep purple-red, to a creamy white. This root veggie turns buttery and sweet with an earthy taste when cooked.
The different colors have slightly different flavors. Red beets have a more earthy flavor than yellow. Remember when cooking that red beets can color everything in your recipe a reddish tint. Use yellow beets if you want to prevent a red tint on the rest of your meal.
The beet is a powerhouse of antioxidants and other vitamins and minerals. The root of the plant is what most people eat, but did you know that the greens are also edible? Just sauté like you would other types of greens, or eat raw in a salad.

Skin should be smooth, unbruised, and unwrinkled. Smaller beets are a bit sweeter than larger ones. If their greens are still attached they should not be wilted
Store
Do not wash before storing. Refrigerate in a plastic bag with most of the air removed. They should stay fresh for about two weeks.
