Fresh spinach is a leafy green that has a mild, slightly sweet taste that becomes lightly acidic and more robust when cooked. There are curly leaf, flat-leaf, and baby spinach varieties, all of which can be added to smoothies, salads, soups, and pasta for a little extra heartiness.
Available most of the year, spinach has large amounts of vitamin K, A, manganese, and folate. It is also a good source of iron, copper, and vitamin B2.
