Edible mushrooms are fleshy fungal growths that can be found in the wild or cultivated in mushroom farms. Some varieties of mushrooms can be poisonous so be so instead of hunting on your own, come to our farmers’ markets and buy fresh-picked. There are quite a few mushroom varieties available at your farmers' market:
Button: Good raw, but more flavorful when cooked.
Porcini: Prized for their meaty texture and interesting flavor.
Morel: Highly prized for their rich, earthy flavor, and because their caps are hollow, good for stuffing.
Chantrelle: Highly prized for exquisite flavor, color, and texture.
Oyster: Smooth texture and subtle, oyster-like flavor.
Portobello: A larger version of cremini, good for roasting and grilling.
Cremini: Closely related to button mushrooms, but more flavorful.
Shiitake: Earthy flavor like wild mushrooms, large and meaty.
