The honeydew is a melon that has a pale green to white-green rind and pale green flesh that is mildly sweet. This melon is a good source of Vitamin B6, Folate, and Potassium, and a very good source of vitamin C, potassium, and folate. Honeydew is a musk melon variety that was cultivated here in the U.S. after seeds were saved from a restaurant in New York that was serving this French melon.
Sweet honeydew can be found at your farmers' market fresh from the farm during the summer months. The easiest way to enjoy a melon is to cut it in half or in quarters (depending on the size), remove the seeds in the portion you plan to eat, then scoop out the flesh with a spoon.

Avoid melons that show cracks, shriveling, or other obvious signs of poor quality. Another good test is to shake the melon. If you hear liquid sloshing inside, the melon is most likely overripe.
Store
Store unripe melons at room temperature. Refrigerate ripe melons in a plastic bag for two to three days. Once cut, cover and keep refrigerated. It is suggested that you wash melons thoroughly before slicing to remove any potential bacteria
