Tomatillos are widely used in Mexican and Latin foods, especially in sauces. The fruit of the tomatillo is green and about the size of a large cherry tomato while the inside is white and meatier than a tomato. They grow to maturity inside of a husk and can range in size from about an inch in diameter to a couple of inches.
They are covered by a papery brownish husk that should be removed before use – but they’re worth the effort to uncover the delicious meat inside.

Choose small tomatillos. They are sweeter than the larger ones. The husk should be light brown and fresh looking (not shriveled and dried). Unlike tomatoes, tomatillos should be firm and free of defects.
Store
Store them in the refrigerator inside a paper bag with the husks left on. They will last for two to three weeks.
