Did you know that ancient Egyptians and Greeks used celery leaves to dress up garlands and wreathes? Over the centuries, celery has become a staple culinary vegetable. The most common variety is the Pascal. This variety of celery grows in tight, straight bunches with feathery leaves at the top.
California celery is available year-round, in many shades of green. The stalk’s flavor is mild, while the edible leaves provide a stronger flavor.
Very low in calories but rich in nutrients, celery is a good source of dietary fiber, riboflavin, vitamin B6, pantothenic acid, folate, calcium, magnesium and phosphorus.
